With a menu that reflects Chef Ramsey's refined repertoire in Japanese cuisine, Spanish tapas and food science, produce is locally grown at the in-house rooftop garden.

We don't serve pork, here is our chicken skin char siu containing over 40 layers of skins, all of the fat is cooked out and a block of pure collagen is left behind. We crisp it up and then it takes a dip in our amazing char siu sauce. Intensely satisfying to have that crunch of the outside with the unctuous gooey collagen center. It nearly a culinary doppelgänger!
